From a Charleston kitchen to your countertop

This is the story about pickle kits at Pickle It Up, made in Charleston, South Carolina — and like all great things in the Lowcountry, it started with good food, good people, and a whole lot of flavour. Everything about pickle kits here starts with that same simple idea. In 1990, our founder Jack Kahn launched Jack’s Pickleworks with a single mission: to bring authentic, small-batch kosher dill pickles to a community that took its food seriously. Using a carefully developed spice blend and a cold-brine method that required no cooking and no shortcuts, Jack quickly earned a reputation as Charleston’s go-to source for real, crunchy, flavour-packed pickles.

At his peak, Jack was supplying artisan pickles to over 50 restaurants across the Lowcountry — from neighbourhood diners to white-tablecloth establishments. His kosher dill pickles, half sour pickles, and pickled vegetables became a quiet staple behind some of Charleston’s most beloved dishes.

What Clients Say About Us

I ordered the E-Z Half Sour Pickling Kit, and I couldn’t believe how easy it was to make fresh, crunchy pickles at home. The instructions were simple to follow, and the flavour was exactly what I was hoping for—fresh, tangy, and perfectly crisp. My family finished the first batch in just a few days. I’ll definitely be ordering the refill kit next!

The E-Z Kosher Dill Pickling Kit exceeded my expectations. Everything I needed was included, and the seasoning blend produced authentic deli-style pickles with amazing flavour. I appreciated how beginner-friendly the kit was. I’ve already recommended it to several friends who love homemade pickles.

I purchased the E-Z Pickling Combo Kit because I wanted to try both Half Sour and Kosher Dill pickles, and it was the perfect choice. Both recipes turned out fantastic, and when I ran out, the Half Sour Pickle Kit REFILL made it easy to keep making more without buying a whole new kit. Excellent quality, great value, and delicious results every time!

FAQs

Keep cucumbers in the fridge and use them within a day or two of purchase for the best crunch. Avoid washing them until right before pickling, since extra moisture can speed up spoilage.

Half-sour pickles usually need just a few days in brine, far shorter than full sour pickles, which can take weeks.

Soft pickles almost always trace back to weak or overripe cucumbers, not the spice mix. Fresh, firm cucumbers fix this issue fast.

Half-sour pickles carry a milder tang and shorter brine time, while kosher dill pickles ferment longer for a sharper, more sour bite.

Half-sour pickles typically stay fresh in the fridge for two to three weeks once opened. Keep them sealed tight and always use a clean utensil to scoop them out.
